Dandelion Sauce, also known as “Dandelion” or wild mountain chicory, is processed immediately after being hand-picked and made into sauce at the “Zeruna” farm workshop.
Delicious sauce excellent for pairing with cheeses of any kind, fresh or aged, with cured meats, with bacon and lard, or combined with hard-boiled eggs.
The harvesting and processing of the dandelion is done manually, with full respect for tradition and the preciousness of the raw material. An excellence of Marco and Carmela of Zeruna that arrives directly to your tables.
Dandelion sauce comes from a plant well known in folk traditions for its healing and depurative properties. Our grandmothers harvested it, cleaned, hulled and eaten seasoned after cooking, or as an ingredient in soups. The young leaves were added raw to salads while the root was boiled to make decoctions.
The harvesting of the tassaco is done by hand, and the skillful craftsmanship results in a valuable and versatile gourmet product that can be enjoyed as a topping for pasta, rice, potato gnocchi, hard-boiled eggs, cheese and charcuterie boards, or simply hot bread croutons.
Dandelion sauce is made with care and dedication, offering a unique flavor rich in beneficial properties. It is an artisanal product, prepared in a traditional way to preserve its freshness and authentic taste. It is based on wild chicory or Taraxacum officinalis (also called Dandelion), a wild perennial plant belonging to the Asteraceae composite family, known for its healing and digestive properties.
This sauce is perfect paired with fresh or aged cheeses or to dress pasta dishes or fish main courses. It is also excellent as a garnish for grilled meats.
Dandelion sauce is packaged in a sealed glass jar to preserve freshness and quality at the laboratory in Zeruna.
