Heart of Dandelion, a wild mountain chicory in oil.

Dandelion buds, more commonly called Dandelion, is a rare and prized product. Very difficult to harvest, they are blanched for only a few minutes and hand-packed in jars with water and vinegar to enjoy any time of the year. Their aftertaste is a bit bitter but is muted by the vinegar and flavorings.

Used as an appetizer as it is the dandelion bud turns out appetizing and unusual. Try it on a mozzarella base to make delicious bruschetta.

Dandelion buds in oil: use in cooking, food pairings, storage, and origin

What are dandelion buds in oil and what do they taste like?

These are the young buds of the dandelion processed by hand and preserved in oil. They are reminiscent of “dandelion capers”: crisp, herbaceous scent, slightly bitter and sour note. They are a perfect mountain specialty for those who love genuine flavors and traditional preserves.

How do they keep after opening and how long do they last?

Keep the jar in the refrigerator, with the buds always covered with oil. Use only clean, dry cutlery, close tightly. Consume them preferably within a few weeks to enjoy top aroma and crispness. If the oil drops, top it up with a good oil.

How to use dandelion buds in oil in cooking?

As versatile as capers, but more delicate.

Appetizers and bruschetta with fresh cheeses
Potato salads, hard-boiled eggs, grilled vegetables
Pasta, risottos, tartare, and carpaccio (add them at the end of cooking)
Quick tip: Try them on white pizza with stracciatella and anchovies: 3-4 buds per serving will suffice.

Where do the buds come from and when are they harvested?

We harvest the buds by hand in the mountains in spring when the plant (also called “dandelion” or “wild chicory”) is at its best. Small production and seasonal harvesting explain the limited availability: a few jars, lots of quality.
