Wild mountain asparagus in oil: doubts, questions, use and storage
Where does upland asparagus come from and how do we process it?
We select wild asparagus hand-picked in the mountains between Pertica Bassa and Valle Sabbia and entrust them to small artisan workshops. After a quick boiling they are potted with oil, wine vinegar and salt, with no added preservatives, so they keep their aroma and crispness all year round. 220 g jar: a local delicacy, made the old-fashioned way, with attention to seasonality and sustainability.
How do they store once opened?
Keep them in a cool place away from light; after opening, store them in the refrigerator, making sure the asparagus stays covered with oil. Use clean cutlery and close the jar tightly. For taste and quality, we recommend consuming them quickly (within a week, approximately). Always check the directions on the label.
How best to enjoy wild asparagus in oil?
Versatile and flavorful:
appetizers and aperitifs with Brescia cured meats and cheeses
bruschetta and scrambled eggs
risottos and “mountain” omelettes
For a typical pairing, try a fresh white or a Chiaretto from Lake Garda. Tip: Drain them lightly and use the oil from the jar to dress salads and cereals.
Are they a seasonal product? How does availability vary?
Mountain asparagus is harvested in spring, when nature is most generous. Artisanal canning allows us to offer them year-round, but quantities remain limited because they depend on high altitude harvesting and manual labor. If you find them available, now is a good time to put them in your pantry.
