The Borgo Il Mezzanino farm is a producer who gives thanks to the environment; specifically, ethical honey means honey produced in an environment that carefully respects the rhythms of nature and the well-being of bees. This is precisely what Borgo Il Mezzanino Farm is all about, located in Salò in an ancient 1700s mansion, now a charming resort.

Indeed, this innovative reality within an ancient setting aims to protect the nature that surrounds it, the lush and varied nature typical of the hills of Lake Garda. With this goal to lead the way, the development of the “Ethical Honey” project kicks off in 2019. Bees, pollinators and guardians of the biodiversity of the territory, are in fact delicate little animals that have to deal with several enemies: on the one hand, pesticides and climate change, and on the other, attacks by the varroa mite.

The company takes action to protect bees with the help of non-invasive biological treatments and through scrupulous and constant digital monitoring of hives

These are monitored daily in their biological parameters such as weight, productivity, temperature, humidity and sound intensity so that immediate action can be taken if problems arise. The process in no way goes to disturb the peace and quiet of the bees, who rather in the enchanted setting of these hills are pampered and protected by hands that know them well and put their well-being first.

Such generous love that the bees receive can only be reciprocated with an exceptional acacia honey, the result of a respectful balance between man and the environment. A high quality natural product in whose velvety texture one savors all the beauty that embraces Lake Garda.

Acacia honey (or black locust) has a beautiful very light golden color and boasts organoleptic properties that make it unique and appreciated, including its high sweetening power and its tendency not to crystallize. This natural honey in fact remains soft even once opened, and with its higher fructose concentration compared to glucose it is an excellent energizer and restorative.

It does not require insulin to be metabolized, which makes it a product that can be consumed by diabetics, always under medical advice.

With its delicate aroma and flavor, with faint vanilla notes, acacia honey soothes sore throat and cough, and is also perfect for celiacs as it contains no gluten.

Behind its delicacy, acacia honey also hides a detoxifying effect, and proves useful both in promoting intestinal balance and in counteracting stomach acidity.

Organoleptic characteristics

Essences that most frequently can change the organoleptic profile of acacia honeys include rapeseed and other brassicaceae, dandelion, heather and ailanthus;

  • Taste: very sweet, acid not perceived or slight, bitterness not perceivable;
  • Persistence: brief;
  • Other: a burning, irritating sensation on the tongue or in the throat is often described; it could be attributed to the high osmotic pressure of the liquid honey, which tends to dehydrate the mucous membranes.
