Chestnut honey is derived from the chestnut flower, which blooms between the months of June and October
How chestnut honey is made
To produce chestnut honey, Poscavrì’s bees find the nectars they need in the early 20th-century chestnut grove that stands just a few hundred meters from their hives, among the mountains, in anarea rich in biodiversity and far from any form of intensive agriculture.
Thus was born mountain chestnut honey, distinctly fragrant, full-bodied and amber-colored, which absorbs the properties of the most genuine nectar and gives caramelized fragrances.
Food pairings and nutrient intake
It is a perfect accompaniment to a tasting of tasty or fresh sheep and goat cheeses, as well as being rich in all the minerals that are particularly useful for athletes.
In 2020 he was recognized with the Silver Bee of Lombardy as the third best honey in the region
Chestnut honey is produced in a pristine valley
Chestnut honey is produced by Poscavrì, a small farm dedicated to nature and founded a very few years ago by Martina and Alessandro. Their farm is surrounded by woods, full of green nooks and crannies where plants such as Thyme, peppermint climbing rosellas, elderberry, healing wild herbs and many, many other little plants grow.
What does the indication “Mountain Product” mean?
This quality indication (issued by the European Commission) aims to promote the recognizability and characteristics of the agri-food productions of mountain territories, with which the small companies of our territory tell their stories made of traditions, quality and goodness.
The “Mountain Product” label was created to show how these companies guarantee the consumer an authentically mountain product, while also ensuring that the highest quality standards are met as well as unparalleled taste.

Mountain chestnut honey: fragrance, uses and tasting
Where does our mountain chestnut honey come from and how is it made?
We select mountain chestnut honey harvested on our highlands between June and October, where the chestnut groves are far from traffic. It is artisanal and unpasteurized, cold-processed to respect natural scents and characteristics. The jar is 0.5 kg, perfect for those who like a strong taste without waste.
It is a dark honey, with a woody and persistent aroma: we propose it for those looking for an authentic flavor of the Brescia and Lake Garda area.
Does it crystallize? How do I best store it without ruining it
Chestnut tends to stay liquid longer than other honeys, but slight natural crystallization may appear over time: it is an indication of quality, not a defect.
Storage: keep it tightly closed, in the dark, away from heat sources (not in the refrigerator). If it thickens, soak the jar in warm water for a few minutes, stirring gently.
What does chestnut honey taste like and what does it go with?
Chestnut honey is intense, with bitterish and slightly tannic notes; aromatic and “woody” on the nose.
Top pairings: aged and blue cheeses (including goat’s milk), rye bread, nuts, roasts and game; in a cup, great with balsamic herbal teas. For a “mountain” breakfast, try a slice of warm bread, ricotta and a strand of chestnut.
Chestnut, acacia or millefiori: which to choose and when?
Depends on use: chestnut = strong taste, dark color, ideal with cheese and meats; acacia = sweet and delicate, great for sweetening without covering up flavors; millefiori = balanced profile, perfect every day.
If you’re looking for “mountain” character and savory pairings, choose mountain chestnut honey; for yogurt and light tea, acacia is best; for breakfasts and versatile recipes, go with millefiori.
