What is acacia (locust) honey and what are its characteristics?
This is a monofloral honey from locust trees: very clear, mild fragrance, very sweet and clean taste. It stays fluid for a long time due to high fructose; perfect for sweetening without covering. In the areas between Lake Garda and the Brescian valleys, flowering is between May and early June, so vintage and climate affect the profile.
Where does our artisan acacia honey come from?
We select small beekeeping farms that follow flowering between the hills of Lake Garda and the pre-Alps of Brescia (nomadism).
