Pià della Tesa DOC organic botticino wine is one of the most representative expressions of the Noventa winery.

The grapes come from a vineyard located in an area with a southeast-facing exposure where the vines receive sunshine throughout the day along with a constant breeze, resulting in healthy grapes with no chemical treatments, like all of Noventa winery’s organic wines.

The roots of these vines rest on marly clay soil that is surrounded by quarries for the extraction of the famous white marble “Botticino Classico.”

Here the vines absorb an important amount of minerals, which are then found in the flavor of the wine.

During the harvest, only the best bunches are selected and they are gently destemmed. The grapes are then subjected to fermentation in temperature-controlled oak barrels, and for 10 days punching down (mixing of the pomace) and gentle pumping over (transferring the must from the bottom to the top) are carried out. The wine then ages for 18 months in the barrels and another 6 months in the bottle to produce a sumptuous red that combines strength and elegance.

Recommended pairings with Pià de la Tesa DOC organic

This wine combines strength and elegance, to be paired with main courses of important red meats, braised and overcooked meats or with a nice grilled tenderloin because it is able to dry the fattiness with good tannin, and accompany the ferrosity of rare meat.

Outside of meals, Pià de la Tesa wine is the perfect accompaniment to a good chat.

From the Botticino DOC specification

The favorable exposure of the soils, sunny and protected by the Pre-Alps chain, and the clay-limestone nature of the soils, located on the slopes of the steep hills east of Brescia, create an ideal environment for the production of red wines with typicality and body, which reach perfection with aging.

A little trivia from the quote by oenologist | agronomist Carlo Ferrini

One of the most important features of this plot, is the southeastern exposure, towards the opening of the amphitheater, so that the vineyard receives sunlight constantly throughout the day. The soil of the Pià de la Tesa vineyard is marly clay, and it is surrounded by the quarries where the marble” Botticino Classico” is extracted; in fact, in this vineyard, under about 40-50 cm of clay soil, the roots of the vines rest and enter the famous marble. This results in an important absorption of minerals, which we then find in the flavor of the wine.

Harvesting is done in the first weeks of October and is done by selecting the best grapes, which are gently destemmed. As for fermentation, the grapes were placed to ferment in temperature-controlled barrels for 10 days, during which we performed gentle punching down and pumping over. Malolactic fermentation took place in old 10-hectoliter oak barrels, in which the wine aged for about 18 months. After bottling, bottle aging lasted 6 months.

Pià de la Tesa, trivia and useful info to know

What wine is Pià de la Tesa (Botticino DOC) and where does it come from?

This is a 100% organic red wine from Brescia, signed Noventa and grown in the hills of Botticino, at high altitude (about 400 m above sea level) near the historic marble quarries. It comes from a typical local blend: Barbera 35%, Sangiovese 35%, Marzemino 20%, Schiava Gentile 10%. It ages for a long time in oak barrels (about 18 months) to achieve structure and elegance.
It is one of the most identifiable expressions of winemaking Lombardy: intense profile, artisanal soul, organic certification and bottle yield that tells of Brescian territory and tradition.

How do I store it and how much can it evolve?

We store it lying down, away from light and vibration, between 12-16°C with moderate humidity. It is a wine with potential to evolve up to about 8-10 years in the best vintages: with time it integrates tannin, spices and more complex tertiary notes. After opening, close with dedicated cork and store in the refrigerator: 2-3 days is ideal (then return to serving temperature before pouring).

How does it taste and what do I best pair it with?

It gives us dark fruit (black cherry, plum), hints of sweet spices, licorice, tobacco and a touch of cocoa from well-dosed wood. The sip is structured but balanced, long and enveloping. To enhance it:
Serving: 16-18°C in a wide goblet; useful decanting 30-60 minutes.
Pairings: spiedo bresciano, braised meats, roasts, game, aged cheeses from the Brescian valleys.
Occasions: Sunday dinners, slow, convivial dishes, fall courses.
This is an important table red, perfect when you’re looking for territorial character without sacrificing finesse.
