Jam from organic crops located at 1000 meters above sea level in Valle Sabbia, province of Brescia (IT).
According to a European directive, the correct term for this product is “jam,” as the word “marmalade” is to refer only to products made from citrus fruits. This directive has been in effect since 1982, although the word marmalade is very often still commonly used today for products made from fruits other than citrus, including strawberries.
According to the law, the fruit used for jams must be fresh, healthy, intact, perfectly clean, properly popped, and have the right degree of ripeness.
A fruit jam recipe involves a skillful mixture of fruit pulp, sugars and any other ingredients.
Extra jam is distinguished by the presence of unconcentrated fruit pulp, and is therefore considered to be of higher quality than simple jam.
It should then be clarified that the term pulp refers only to the edible part of the fruit.
There is also a further distinction to be made on the subject, which concerns the difference between extra strawberry jam and extra organic strawberry jam. The latter is preferred, because it is recognized as healthier and safer: more details in the next lines of the article.
Why choose extra organic strawberry jam
Extra organic strawberry jam is made exclusively from the use of organically grown strawberries. All this makes extra organic jam a product that is much more friendly to people’s health. In fact, organic agricultural products are grown without ever using chemical pesticides.
The benefits of eating organic can be summarized in the following points:
- Healthier and more wholesome foods are taken in, with undoubted health benefits;
- Pesticide residues in non-organic fruit can have long-term health consequences for consumers;
- Organic fruit has greater purity than non-organic fruit;
- Being purer, an organic fruit is also more nutritious;
- Organic farming is completely unrelated to the concept of genetically modified organisms.
Having ascertained that organic products can be considered healthier than other types of foods for many reasons, let us now try to understand why an extra jam can be considered better than a jam proper:
- Extra jam is made through the use of unconcentrated fruit pulp;
- Concentrated fruit pulp undergoes industrial processing, unlike unconcentrated fruit pulp.
It follows, that in order to take in more of the fruit’s nutritional properties, but also to be sure of the fruit’s provenance, it is always preferable to choose products with unconcentrated fruit pulp. In fact, concentrated fruit could also have been produced in places where controls are less strictly enforced, or in places where regulations in this regard are less scrupulous than in Italy or the rest of the European Union.
Our extra organic strawberry jam
Biodase Farm’s extra strawberry jam is produced through the use of fruit that comes only from the Biodase plantation, which is located at 1,000 meters above sea level in the village of Pertica Bassa, belonging to the municipality of Vallesabbia (Brescia).
Strawberries from this plantation are obtained by using only organic farming methods.
The processing procedure for this extra jam, consists of picking strawberries when they are ripe enough and processing them on site quickly. In this way, a very delicious and very nutritious extra jam of organic strawberries is obtained.
Once processed, the extra jam is packaged and then sold, inside a 200-gram jar.
To make Biodase Plantation Organic Extra Strawberry Jam, only and exclusively the following ingredients are used:
- Organic strawberry
- Pectin
- Organic lemon juice
- Organic brown sugar.
The list of ingredients just given, helps even more to understand that this is an extra and organic jam of great quality. Here’s why:
- In the list of ingredients, organic strawberries are the first to appear, while sugar is the last of the items-meaning that more fruit than sugar was used for the product.
- Relatively few ingredients are used in making this extra jam, which is another indication of the product’s reliability.
- Strawberry, lemon juice and brown sugar used are all ingredients obtained from organic farming.
- Pectin, an ingredient that appears second on the list, is very useful in jam making, as the experts themselves know. In fact, it serves to thicken the jam better, thus making it more pleasant to taste.
Pectin is already found naturally in fruit, but some fruits are deficient in it, so additional amounts are added to speed up the classic gelling process.
Why is this process speeded up? For one very important reason: to reduce the loss of vitamins that would otherwise occur from prolonged cooking. In essence, therefore, pectin serves to reduce the cooking time in the preparation of jam, thus allowing for a product that is dense to the right degree without excessively losing the nutritional properties of the fruit.
Suggested use of extra organic strawberry jam
