On Saturday, June 23, the inauguration of the sales point for the artisanal products of thefarm “Le Due Casine” took place in Capovalle, in the mountains of the upper Valle Sabbia (Province of Brescia).
How could we not be present and miss the celebration of this new beginning for Davide and Luisa? Indeed, gluttons for their creations we were there, at the forefront!
Many people attended the event, on the border of the Vestino Valley and Lake Idro. Friends, curious people, passing tourists, all eager to taste the many delicacies present. Salami, loin, coppa, bacon, lard, sausages capable of standing out, moving on to cheeses, fresh and aged from its goats that convey the culture of good territorial food, with authentic flavors of natural and artisanal products from the high mountains.
Davide and Luisa, the two owners, undertook this initiative to give the opportunity to be able to have tastings and buy their products on site. This space, overlooking the Garda-Adamello horse trail, features those products the owners obtain from their animals, the result of combining a natural and balanced diet, made from GMO-free grains and Living in a natural habitat.
With their spontaneous and natural friendliness Davide and Luisa sliced cold cuts, cut cheeses, and explained in great detail how they processed their products, the cuts used of meat, the difference in flavors between the various maturations of their goats.
It was also with great privilege that we visited the winery’s new cellar, accompanied by Davide as he explained that clean air and temperature range from day to night make ideal curing forhis creations (among them a crudo of Nera di Parma pork of incomparable goodness).
We left the titular couple to their busy schedules, as usual oozing with love and passion for those products, the fruit of their labor, their dream, realized in a location surrounded by forests and meadows at 1,000 meters above sea level.
