Made from a harvest done manually in the hills of Brescia (next to the Botticino marble quarries) and aged for about 20 months
Colle degli Ulivi botticino DOC wine is made from vineyards located along the ridge of Mount Maddalena. The soil is hazelnut in color and is composed of a perfect combination of sand, clay and silt with a very high percentage of limestone. The grapes obtained from these vineyards, Barbera, Sangiovese, Marzemino and Schiava Gentile, are fermented in large concrete barrels and maceration lasts 12 days.
Theaging that follows lasts 20 months, again in concrete barrels that maintain the wine’s freshness.
Through the use of traditional techniques of soft mashing, rainfall pumping over and racking that are carried out during fermentation and aging, an excellent wine is produced: the Colle degli Ulivi.
With the vineyards high in the hills at about 400 meters, an ideal exposure and microclimate assisted by a constant breeze is obtained healthy grapes without chemical treatments.
A genuine wine with a reduced use of sulfites with the soil that knows no chemical herbicides, the workings are manual given the conformation of the hills.
There is no possibility of mechanizing the work, so most of the paperwork is also done by hand because of the need to use extreme care for each individual bunch and each individual plant. Thanks to the strong daily temperature range, the fresh aromas in the new grapes are maintained in the future wine. Obtaining the organic certification is a consequence of the work well done by the Noventa family, with sacrifice, hard work but also great satisfaction as the vine takes advantage and benefits the best.

From the Botticino DOC specification
“The favorable exposure of the soils, sunny and protected by the Pre-Alps chain, and the clay-limestone nature of the soils, located on the slopes of the steep hills east of Brescia, create an ideal environment for the production of red wines endowed with typicality and body, which reach perfection with aging. In order to safeguard the constancy and typicality of the area’s production, it is intended to maintain the traditional grape varieties and the proportions among them, always traditionally. The oenological practices used in the vinification, aging and storage of Botticino wine are the traditional and rational ones of the area with due care dictated year by year according to the grape in order to keep the product uniform, constant and typical.”

Colle degli Ulivi Botticino DOC bio, useful info and trivia
What wine is Colle degli Ulivi Botticino DOC organic?
In short: An organic red wine from the hills of Botticino (Brescia), the fruit of the Noventa winery.
This is a traditional blend of Barbera, Sangiovese, Marzemino and Schiava Gentile, with a fragrant, mineral profile thanks to the marly, calcareous soils of Monte Maddalena.
Indicative alcohol 13.5% vol, dry and balanced style, with good drinkability.
How long does it last in the cellar and how is it stored after opening?
Guidelines: store bottles lying down, in the dark, 12-16 °C with constant humidity; avoid temperature changes.
This organic Botticino DOC is at its best within 4-5 years of the vintage, so it expresses fruit and spice without losing harmony.
After opening: reseal with airtight/vacuum cap and refrigerate; stay enjoyable for 2-3 days (bring back to 16-18 °C before serving).
What do I pair it with and what temperature do I serve it at?
Practical tip: Serve it at 16-18 °C in a wide goblet, uncorking 30-60 minutes beforehand.
It goes well with Brescian cuisine and savory dishes:
brescian spit and barbecued red meats, beef in oil, braised meats, pasta with meat sauce or salmì, typical cured meats and aged cheeses from the Brescian valleys.
Its soft texture and the freshness of Barbera make it a versatile table red, also perfect with stewed game and steaming polenta.
