Fillet of pork raised in the wild covered with wild herbs hand-picked at high altitude.
The pure pork tenderloin of the farm ‘Le Due Casine” is produced in Località Muraghe, in the municipality of Capovalle (in the province of Brescia) at about 1,000 meters above sea level.
The pig, raised in the wild, is fed naturally on a healthy, balanced diet consisting of barley, oats, bran and flour, with a balanced ratio of protein and grains without the use of GMOs.
During aging, it is flavored with local wild herbs that grow among the spectacular mountains of the Caffaro Valley, in the mountains surrounding Bagolino.
Harvested by Davide and Luisa in late summer, wild fennel manages to give this prized tenderloin a unique and savory flavor.
The tenderloin is then massaged and salted, placed in dry brine for 7 to 8 days, after which it is hung and left to dry and season for about 20 days in the cellar, thus making its own that typical cave scent where the cured meats season by hanging at more than 1,000 meters.
Artisanal herb fillet: free-range farming, pairing and storage
What is our herb tenderloin?
It is a lean and tender pork tenderloin, flavored with Mediterranean herbs (rosemary, sage, thyme) and hand processed by small producers. We use an essential tanning to enhance the natural flavor, without covering it up. The goal is to bring to the table a fragrant, balanced herb fillet that is consistent with our idea of artisanal quality and short supply chain between the Brescian valleys and Lake Garda. It is ideal for quick recipes and light but tasty meat dishes, with a soft texture that conquers at first cut.
What to pair it with to best enhance the herbs?
It focuses on freshness and balance.
Side dishes: rosemary potatoes, grilled zucchini and peppers, misticanza salad.
Light sauces: emulsion of Garda oil, lemon and mild mustard; yogurt and chives.
Bread & cereal: crispy focaccia or warm farro.
Local wines: Lugana or Valtenesi rosé; for bubbly, Franciacorta.
For a gourmet sandwich: slices of herbed tenderloin, beef heart tomato, salad and a dollop of lemon mayonnaise. Simple, fragrant, satisfying.
Why does our tenderloin taste so authentic?
The difference comes from free-range farming and natural feeding, without industrial feeds that flatten the taste. Pigs grow in open spaces, with a slower pace and less stress, developing a more fragrant and consistent meat. The exclusive use of real herbs and simple ingredients completes the work, with no need for additives or shortcuts.
Thus we obtain a fillet with herbs that tastes of territory and tradition, capable of taking you back to the genuine flavors of the past.
How can it be stored? And can it be frozen?
In the refrigerator, we do not recommend freezing.
Vacuum-packed you can keep it in the refrigerator and take it to the expiration date you find on the label.
After opening: close tightly with its own cover that we will insert in the package and consume quickly.
Freezing: we do not recommend it because it can ruin the tissues of the meat and alter its texture. That said, it is still doable: just portion, wrap tightly and freeze quickly.
Thawing: always slow in the refrigerator, never at room temperature.
