Fiorentina beef steak, tender and with bone, Italian meat raised and butchered in Valle Sabbia of the highest quality.
The beef steak will be cut by our producer Stefano Vassalini upon receiving the order.
We’ll then make sure to vacuum pack it and deliver it to your home within 48 hours.
Once received and taken out of the polibox with ice-gel, it’s recommended to follow this procedure before cooking it:
- Take the meat out of the vacuum pack;
- Dry it with a dish towel;
- Bring it to room temperature and let it “breathe” for about 30 minutes.

Limousine breed Fiorentina: origin, perfect cooking, and tasting tips
Where does our Limousine breed Fiorentina come from?
Origin and quality: it’s Fiorentina (T-bone with filet and bone) from adult cattle raised in Valle Sabbia (Brescia). It’s aged for at least 40 days in a chamber, then cut on the spot by our producer and vacuum-packed. The label has traceability info and adherence to the Documented Beef Consortium. We only ship between Monday and Wednesday to preserve the cold chain. It’s the ideal choice if you’re looking for full flavor, Brescia tradition, and artisanal processing.
What wines and sides go well with Fiorentina?
Table Pairings: the Fiorentina Limousine is at its best with a bold red like a red wine from Lake Garda that complements the juiciness of the meat.
As a side, we at bbuono suggest simplicity: roasted or grilled potatoes,
seasonal grilled vegetables, fresh salad to cleanse the palate.
A drizzle of raw extra virgin olive oil completes the dish without overshadowing its character.
How to cook Fiorentina for a steakhouse-style result?
Quick preparation: take out of vacuum, pat dry, and let breathe for 30 minutes at room temperature.
Cooking: charcoal/grill/hot plate or pan.
Thickness “matters”: sear the outside well, turn once, and cook to the desired level (rare or medium).
Rest for 5–10 minutes on a rack; salt and pepper at the end.
Shop tip: no piercing forks, use tongs; if you want an extra crust, dry the surface really well. The Limousine breed offers tenderness and juiciness when cooked with strong heat.
Available in sizes from 1 Kg up to about 2 Kg
