The artisanally produced pork fiocco is a traditional Italian agri-food product. This one in particular has a delicate taste, delicious as an appetizer or served with some curls of butter on warm bread.

This sausage is the pride and joy of the Vassalini farm. It’s made exclusively with selected premium pork thighs from the province of Brescia.

The fiocco, characterized by a strip of fat 1 to 2 cm thick, is a pork sausage naturally cured and aged but not ground; it’s obtained by sacrificing the ham (from which it is isolated), thus giving up a food that is quite valuable on its own. The remainder of the processing is then used for another typical sausage, the fiocchetto.

Once the ham is out of the vacuum, don’t seal it with plastic wrap, rub its surface with extra virgin olive oil or butter, wrap it in a clean, dry linen cloth, and store it in the cellar or alternatively in the fridge.

How to taste the pork fiocco:

The fiocco should be enjoyed on its own to savor the uniqueness of this cured meat. Its flavor is delicate, great with white bread, crostini, or paired with cheeses like mozzarella or with curls of butter.

Sold and vacuum-packed in pieces of about 0.5 kg

Fiocco di prosciutto: what is it, how do you cut it, and how do you store it?

What is the prosciutto ribbon and where does it come from?

It’s the leanest cut of the pork thigh, taken from the muscle opposite the culatello and air-cured according to the Emilian tradition (Po Valley). It has firm meat, a delicate aroma, and a savory yet refined taste. It’s perfect for those looking for a dry and light cured meat. For “fiocco di prosciutto cos’è” you’ll often find synonyms like “fiocco” or “fiocco del prosciutto”: we’re talking about the same artisanal specialty, crafted with salt and time, no frills.

How to cut and serve the fiocco to enjoy it best?

Slice thin and serve at room temperature (15–20°C). Remove casing/outer rind, trim oxidation, tie well for a stable cut. Smart pairings: crusty bread or michette, butter and pepper, figs or melon in season, crunchy vegetables or aged cow cheeses. Also great in piadine, rich salads, or on white pizzas after baking.

Difference between fiocco and culatello: which one to choose?

Fiocco vs Culatello in short:
If you’re looking for elegant aroma and great versatility, go for the fiocco; for an intense and buttery experience, the culatello. Both are artisanal excellences: we support small producers who work slowly and respect the raw materials.

How to store the whole or sliced ham (even vacuum-packed)?

Whole: store in a cool, airy place (10–15°C) or in the fridge in the least cold part, wrapped in food paper/cloth.
Vacuum-packed: keep in the fridge at 0–4°C; open 30 minutes before serving.
Sliced: seal well and consume within a few days to maintain aroma. Avoid humidity and temperature changes.

Buona serata, Mattia
