The Bagoss is a raw and semi-raw cheese, with internal maturation, and a rind about eleven centimeters thick.

A wheel weighs between 18 and 20 kg. The aroma is that of a characteristic aged cheese, with spicy saffron notes, combined with hints of pasture and hay that give it a typical intense flavor, slightly spicy, especially in the well-aged Bagoss.

Bagòss is a cheese born in Bagolino, a small village in the province of Brescia located in the middle of the Valsabbia mountains.

Still produced today with traditional methods passed down from generation to generation, unmistakable in taste and flavor, its name is Bagòss and its fame has now reached worldwide levels.

The organoleptic characteristics and specifications to recognize the real Bagòss.

The shape is cylindrical and its weight usually ranges from 17 to 20 kg, with a diameter of about 40/60 cm. It has a hard consistency, the rind is oiled with linseed oil showing a height that can vary from 10 to 15 cm.

The pasta is firm and has the typical straw-yellow color, sometimes also showing small holes (due to the natural aging process in the cellars located in Bagolino) while the crust has a brown color tending towards ochre.

The aroma it gives off is intense and persistent, typical of aged cheeses. Smelling it, you can sense the spicy scent of saffron and the air of pastures and hayfields. Especially in the more aged varieties, the flavor tends to be slightly spicy and the texture aims to be more grainy and crumbly.

The tradition and production passed down since the 16th century

Authentic Bagòss is only made in the 28 small farms of Bagolino, where farmers and their families personally handle the preparation of this unique cheese.

Its name comes from the name of the inhabitants of Bagolino, the Bagossi. The production of authentic Bagòss cheese has roots in a very ancient tradition, passed down from family to family for centuries. Its origin probably dates back to the 16th century, when Bagolino was under the rule of the Serenissima.

The presence of the Republic of Venice in these lands can be seen in the Bagòss cheese itself, which, now as then, has saffron as a characteristic ingredient. This spice wasn’t produced locally but was very common in Venice because the Venetians traded goods worldwide, and its careful use gave the cheese its golden color.

The preparation of Bagòss is regulated by strict guidelines that preserve the authentic brand of this unique and rare cheese.

What’s crucial is that the milk used for making Bagòss cheese comes exclusively from brown cows raised and milked in Bagolino.

First, the milk is filtered using conifer twigs and fir needles and then cooked in a large copper cauldron over an open fire fueled by wood.
Next, the cheesemaker adds powdered rennet for coagulation and a pinch of saffron which gives the cheese its typical straw-yellow color and that characteristic aroma we all know.
The formation of the curd and the breaking happen with a sequence of operations done strictly by hand. The mixture is then poured into molds and subjected to pressure.

In the next 40 days, each form of Bagòss will be salted by hand every two weeks.
The weight of each form of Bagòss can vary from 17 to 20 Kg and the production of each single form takes between 3 and 4 hours. In the market, you can find only the true Bagòss cheese with a minimum aging of at least 12 months. Being a handmade product, no form will ever be identical to another.

The aging in the natural cellars typical of Bagolino

Here we are finally at the aging process of our cheese.
Just out of the salt (a duration of about 30/40 days done in the mountain hut), the Bagòss cheese is placed to age and mature in the natural cellars of Bagolino.

For the very first ripening period, each cheese wheel is turned and oiled by hand daily in the Bagolino cellars. The cheese needs special care: the wheel must be scraped, cleaned, and oiled with linseed oil.
After the typical 40 days of aging, it is treated once every two weeks.

Bagoss cheese can have various aging periods ranging from 12 to 48 months, and it’s rare for a wheel to be aged beyond this period. Some lovers of aged cheeses prefer aging of 36/42 months, but a Bagòss aged 24 months is usually more appealing. We at bbuono have wheels with various aging periods in the cellars of Bagolino. The name and origin of Bagòss cheese are guaranteed by the P.A.T certification and the CE stamp.
Many call it Bagoss or Bagòss, but the correct spelling, as marked on the side of the cheese, is with the accented letter “ò”.

After taking it out of the vacuum pack, let it breathe for about 30 minutes at room temperature.
Cheese should never be stored in the freezer because it alters the texture and compromises its characteristics.
Bagòss (like other long-aged cheeses) should be wrapped in a clean cotton cloth, and placed in the fridge or cellar at a temperature below 12°.

    Sono intollerante al lattosio e goloso di formaggi stagionati così ho iniziato a fare varie ricerche su internet e mi sono imbattuto in bbuono.
