Raw materials are the sources of inspiration for Felice Brewery brewing represents the moment of creating an object to amaze others with something unique and original.
Beers can be olfactory as well as evocative; the inspiration for a Happy beer comes from an identity fruit of the area, a family tale or a local tradition. With Rossella beer, the function of bringing nourishment is celebrated. It thus possesses thearoma of barleywines roasted and blended to various degrees, the color is that of the hearth, and the alcoholic degree, not exhausting, leads to a mug of agile drinking.
Cask red beer: what makes it so special?
What is a wood-aged red beer?
This is a red ale aged in barrel (oak, chestnut or ex-wine/spirits) for weeks or months. The cask rounds out the beer and adds notes of vanilla, toast, red fruit, spice or mild acidity (Flanders Red style). It remains an amber/brown colored craft beer with a smooth body and more complex finish than a classic red.
What do I pair a barrel aged red beer with?
It is super versatile. We serve it with aged cheeses (bagòss, grana), grilled meats, braised meats and lake cuisine (eel, smoked whitefish). Also wonderful with casoncelli with butter and sage or dark chocolate desserts.
Tip: Try a food pairing by contrast (fatty dishes) or analogy (caramel, toasted).
What aromas should I expect from wood maturation?
Depends on the type of wood and barrel: oak gives vanilla and coconut, chestnut gives more vinous hints and gentle tannins; ex-wine/spirits barrels bring hints of fruit in spirit, caramel, spice.
Profile: caramel, cookie, red fruit, sometimes slight acidity.
Texture: rounder and more enveloping.
Finish: dry/bitter or vinous depending on the barrel.
How is it best served and stored?
Temperature: 10-12°C (12-14°C if very structured).
Glass: tulip or balloon to concentrate aromas.
Serving: pour sweet, leaving the bottom if bottle-refermented.
Storage: dark, upright, 12-16°C; do not stress with temperature changes. Longevity: many cask-conditioned red ales hold 1-3 years; always check label and producer’s lot.
